I invented this recipe when I first went plant based. I was soooo worried about getting enough protein and other nutrients so it was all about how much protein I could stuff into one dish and still be delicious. It’s gotten a lot of rave reviews and friends make it themselves, so I’m glad to know it’s not just me! 🙂
As-is, it packs about 24 grams of protein. If I have them, I will add 2 tablespoons of chia seeds or hemp seeds to pack in even more nutrition and protein. Fresh fruit is a tasty and colorful addition, too!
