I bookmarked this recipe from my Dining At The Ravens cookbook a while ago. It looked good, but with reservations… y’know, vegan baco-bits? Really? So I put off making them until I came across some already-sliced organic shitake mushrooms at a great price yesterday, and I thought OK, lets do this. And let me tell you…O.M.G. they are SOOOOO delicious! I am seriously impressed and will be forcing everyone I know to try them and taking them to parties until everyone is sick of me and my shitakes (but they won’t be cuz they’ll be chowing them down and begging for more.) Really. So get your hands on some shitakes, some smoked paprika, and some sea salt (oh yeah and olive oil) and try them. NOW!

Original recipe from Dining At The Ravens:

8 cups shitake mushrooms,stemmed

1/2 cup olive oil

approx. 2 teaspoons sea salt

smoked paprika to taste.

Preheat oven to 350F

Toss mushrooms, olive oil, salt, and smoked paprika together.

Spread out on a baking sheet and bake until crispy, about 30 mins.

My version, as I had 1 package of shitakes, about 1 pound (about 3 cups)

1/4 cup olive oil

about 1 teaspoon smoked paprika and slightly less than that of sea salt. I used the grey Celtic salt.

Baked at 350F for about 25 mins.

It’s a very easy and I think forgiving recipe, do what feels right for you and experiment!
