Salt Roasted Yellow Beets

Unprocessed foods prepared with love, eaten with joy, are a daily part of the journey to a whole self. Not always the easiest or fastest option, but eating this way on a regular basis will help to heal and is a form of mindfulness and meditation.

For so many years, I mindlessly ate whatever was easiest. I didn’t even taste what I was putting in my mouth, let alone think about what my body needed or wanted. I cut myself off from myself and wondered why I felt so alone, so lost and disconnected from my life.

Making the time to stop and connect into your body and listen to what she needs is a huge step towards feeling love and appreciation for ourselves.

Beets cleanse and detox the liver while being beautiful to look at. Spend a few minutes focusing on your meal and the benefits and love you are giving to your body before savoring the first bite.

You can use the beet greens in your morning smoothie, too. They contain high amounts of calcium and protein and will give you a good base for your daily needs. (Tip: add lots of berries for antioxidants and lowering inflammation, and frozen cranberries to support your bladder!)

Salt Roasted Yellow Beets:

Heat oven to 400F
Pour 1 cup sea salt into pan, enough that the beets don’t touch the pan.
Wash and dry beets before placing on to salt.
Cover the pan tightly with foil and place in oven.
Roast for 35-45 minutes depending on size of beets. Large ones may take an hour.
Remove from oven and let cool for 15 minutes. Discard salt.
